Maison Piruz works with a single spice. Each harvest is chosen thread by thread on a plain oak table in Paris — the second selection is ours, and it is the reason a jar carries our seal.

We do not blend. We do not powder. We do not compromise the flower with anything the flower does not need.

Khorasan. A high plateau where the crocus opens for a few hours at dawn, and every flower is picked by hand.

ORIGIN

Khorasan. A plateau at dawn.

The crocus opens for a few hours between mid-October and early November. The flowers are gathered before the sun reaches them and carried into low houses where the three crimson threads are separated by hand.

Nothing is mechanised. Nothing is hurried. What arrives in Paris a few weeks later carries the temperature of that morning.

Saffron rice, simply.

Rinsed basmati, a pinch of salt, and a small vessel of saffron infusion folded in at the last minute. The colour arrives slowly; the perfume, all at once.
